喝醋,帮助降低血糖

美国科学家最近进行的一项研究,观察8名对照者、11名胰岛素抵抗的糖尿病前期病人及10例2型糖尿病人(都未用过降糖药)。试验者先空腹喝一杯稀释了的醋(苹果薄荷醋、加一杯水),2分钟后进早餐(面包圈、奶油及橙汁共87克碳水化合物);对照者则不喝醋,空腹喝糖精水后进早餐。空腹及餐后定时测血糖及血胰岛素。每人均作试验及对照,一周后交叉进行。结果发现,喝醋能使餐后血糖下降,以糖尿病前期者下降最多。

瑞典研究人员的另一项研究,要求12名健康者试验时吃一块浸有18、23或28克健康醋的白面包,12~14分钟内吃完,同时可喝水、茶或咖啡。对照时则吃没浸醋的白面包。也是一周后试验和对照交叉进行,也都测餐后血糖及胰岛素。结果发现吃浸醋面包餐后30分钟的血糖及血胰岛素均较对照时低,而且吃醋面包者感到耐饥不易饿。

美国的研究还意外地发现,连续早、中两餐前均喝稀释醋者4周后,体重平均降2磅,未喝醋者体重不变,但对向脂异常无作用。还有些类似研究,都说明喝些醋对血糖有好处,列糖尿病前期可减少发展为糖尿病的机率,已是糖尿病者可减轻病情。

但喝的醋至少要5%的醋酸才有效。至于为什么醋有此作用?体外和动物实验研究中认为,醋酸可抑制双糖酶,使食物的血糖指数降低(即相对的升高血糖程度),还能使骨骼肌中的葡萄糖-6-磷酸增加,其作用类似于糖苷酶抑制制剂二甲双胍。

糖尿病人多吃点醋是有益的。但切记它不是药,不能替代正规的降糖药,只能说是辅助治疗的保健食品。
